When chef Paris Nabavi moved to Maui, he brought with him a love of great Mexican food--not the border fare you find in fast food chains, but the true flavors of Mexico’s interior. Unfortunately, he couldn’t find a decent taco al pastor in his new home.

So, Paris decided to open his own Mexican restaurant. His mission: to capture the fresh flavors of the native taquerias and street vendors who offer handmade tortillas stuffed with perfectly seasoned ingredients that explode with flavor. He also wanted to make the food affordable, so enjoying it could be part of everyday life.

Cilantro embodies this philosophy. We begin with authentic recipes from interior Mexico, some passed down through generations, and combine them with local ingredients and exciting gourmet flavors you won’t find anywhere else. We call the result “a fresh take on Old Mexico.” We hope you enjoy it.
